Add lean ground beef. Cook through until fully browned. Add cilantro and cayenne pepper. Add pinto beans. Turn down heat slightly. Add 1/2 cup water to mix then add chopped Kale. Put lid on top and let kale wilt and soften. Add Salt, stir. Turn oven to 350. Pre bake toritillas for about 5 minutes to give them some crispness. Spoon meat mixture onto individual tortillas. Don't over do it- about 3 spoonfuls is good. Top with Mozzarella cheese, sliced jalapenos and diced or sliced Roma tomatoes. Bake until cheese is fully melted and tortilla crispy at 300 for about 12 minutes.
