1-12 oz package of Barilla Jumbo shells
1 tsp salt
1-lb ground beef
1/2 cup onion, diced
2 cups cottage cheese (small curd)
2 cups cheddar cheese shredded and divided
1 tsp chili powder
1 tsp garlic powder
1 tsp cumin
2-15 oz cans of tomato sauce
1-4 ounce can green chiles, chopped
1/2 cup water
1/4 tsp cayenne pepper (opt)
salt and pepper to taste


How Do I Make Mexican Shells?

Here is how you make Mexican Shells:

Fill a large pan with water and bring to a boil. Add salt and shells. Cook 1/2 the recommended time on package directions. (for Barilla it will be 4 minutes and 30 secs) Drain and cool and set aside. In a skillet, brown ground beef and onion. Drain excess grease and cool slightly. In a large mixing bowl, combine cottage cheese, 1 cup of cheddar cheese(shredded) chili powder, garlic powder and cumin. Add the meat mixture. Mix well. In another bowl, mix together tomato sauce, green chiles, water, cayenne pepper and salt and pepper to taste.Place approximately half the tomato sauce mixture in the bottom of a lined 9 x 13 pan. Stuff the parboiled shells with beef/cheese mixture and place stuffed shells over the layer of sauce. Pour the remaining sauce over the shells. Top with remaining shredded cheddar cheese. At this point you can freeze.When ready to eat this freezer meal, thaw overnight in refrigerator. In a preheated 350* oven, bake 45-50 minutes or until hot. If the shells are still icy when starting to bake, tent dish with foil for 30 minutes, then remove foil and bake for another 20-30 minutes.Serving Size: 5 shells equals 1 serving.Number of Servings: 7Recipe submitted by SparkPeople user BUBBLESTOO2.
