1 pound ounces boneless moose roast

1/4 cup whole wheat flour dredging
2 Tbsp olive oil
1 clove garlic, minced
1/2 cup dry sherry or Marsala wine
1/2 cup low sodium beef broth


How Do I Make Moose Scaloppini?

Here is how you make Moose Scaloppini:

1.Preheat oven to 375 degrees F (190 degrees C). 2.Stir together the egg beateres and milk, and set aside. Combine the bread crumbs and minced parsley in a large bowl; set aside. 3.Slice moose roast into six serving size portions. Pound with a meat mallet to about 1/4 inch thickness. Season to taste with salt and pepper, then dredge in flour, shaking off the excess. Dip the moose into the egg mixture, then press into the bread crumbs. 4.Heat oil in an oven-safe frying pan with lid. Cook garlic until fragrant, then add the breaded moose, and cook on both sides until browned. Pour in sherry and beef broth.
