Preheat oven to 350 degrees.Mix together all "Meatloaf" ingredients in large bowl. Shape into a loaf shape and place on rack in roasting pan. Insert meat thermometer.Cook on middle oven rack until thermometer reads 160 degrees (approx. 1-1/2 hours).Remove from oven and let stand for at least 10-15 minutes before slicing.In large skillet, lightly saute onions, celery, and mushrooms (just until onions are translucent). Add beef broth and bring to a simmer for approx. 5 minutes. Add 2 Tbsp of corn starch to 2 Tbsp of cold water to create a slurry.
