Here is how you make Omelet Florentine:

Heat butter in nonstick skillet, stir cook onions and mushrooms until they go limp, and then remove them and set them to the side.Beat eggs, adding salt or pepper to taste, and then add to medium hot skillet, twist pan with your wrist to evenly distribute the eggs in the pan, and then while eggs on bottom cook, lay the ham, spinach, cheese, onions and mushrooms.As eggs cook, lift edges of omelet to allow the runny egg to flow under the side of the cooked egg, continuing until most of the runny egg is gone. Then carefully fold the omelet in half and allow to cook a few minutes longer to set the eggs. Time varies according to how done you want the eggs. Flip once, and cook a minute longer or so.
