Here is how you make South Western Omelet:

Heat 1 tblsp olive oil in a large skillet over med high heat. Add 3/4 Cup Chopped Green (Red) Bell Pepper and 1/2 chopped yellow onion; cook until all ingredients turn light golden, about 3 minutes. Use 1/4 of this filling for each omelet, preparing recipe according to instructions.2)Whisk eggs, water,salt, pepper in a med bowl. 3) Melt 1 tsp of the butter in a 8 inch nonstick skillet over med high heat. Add scant 1/2 cup of the egg mixture and cook 1 min until slightly set. Lift edges of omelet and tilt back and forth to allow egg flow underneath. Cook about 2 min until set. 4) Sprinkle a quarter of the cheese over half of the omelet. Fold in half and close omelet and left cheese melt. Transfer to serving plate.
