Here is how you make Onion Gravy:

Make two patties, about ? inch thick. Refrigerate on a plate until ready to cook.Heat a nonstick pan over medium-high heat. Add patties and cook until nicely browned, 1-2 minutes per side. Return to the plate and keep warm.Reduce heat to medium, add the butter, and saut? onions, cooking them until they are caramelized and an even brown color. The longer you cook them, the better they are. Sprinkle them with flour and stir to absorb any cooking fat and juices. Add sherry and mix well together while the alcohol evaporates. Then add broth, but go cautiously?you can always add more later. Cook until thickened slightly, about 4 minutes. Add patties back into skillet, along with any juices, and turn several times in the thickened gravy, about 3-4 minutes.
