boil a pot of hot water and place penne in to cookwhilst the pasta is cookingprepare the saucesaute onions and capsicumsadd can of corned beef, break it up and fry for a minute or two then add can of tomatoes and the puree.season with salt and pepper to your taste and add whatever herbs you like.I have used mixed herbs such as oregano, basil and thyme with yummy results.Simmer over heat for 10-15 minutes.Once pasta has cooked strain the water and then put pasta in a big baking dish. Pour the sauce over and mix together thoroughly.then pour over the beaten eggs and mix thoroughly.Sprinkle shredded cheese over the top and then place in a very hot oven until cheese on top has become browned and crispy.
