1/2 oz. prosciutto
1 white onion, minced
1 bay leaf
pinch red pepper flakes
1/4 tsp. salt
3 cloves garlic, minced
2 T. tomato paste
1/4 c. chopped sun-dried tomatoes
1/4 c. dry white wine
2 c. crushed tomatoes (reserve 2 T. of the can for later)
1/2 c. heavy cream
2 T. crushed tomatoes (from reserve)
2 T. dry white wine
salt & pepper to taste
1/4 c. chopped basil
parmesan cheese
8 servings cooked, drained pasta


How Do I Make Creamy Tomato Pasta?

Here is how you make Creamy Tomato Pasta:

Melt butter over low heat. While butter melts, mince prosciutto. Add meat to melted butter along with onion, bay leaf, red pepper flakes, and salt. Cook over medium heat till onion is soft, stirring occasionally; about 8-10 minutes. Add garlic and cook till fragrant, about 30 seconds. Add tomato paste and cook, stirring, till it browns. Add sun-dried tomatoes and cook another 1-2 minutes, till deepened in color. Add 1/4 c. dry white wine and 2 c. crushed tomatoesLet cook gently for 25-30 minutes. After 30 minutes, sauce should be substantially reduced. Remove from heat and stir in heavy cream, 2 T. reserved crushed tomatoes, and 2 T. more dry white wine. Add salt & pepper to taste, then add sauce & basil to cooked drained pasta and mix. Serve with a sprinkle of parmesan cheese (about 1/2 T. per serving).
