This is a quick and easy go to dish I make when I'm pinched for time. I use lots of fresh vegetables (can be substituted or added to as desire - these are just my families favorites). The vegetables release liquid as they cook and become the wetness on the pasta so no high calorie sauces are needed. I love doing this with low fat sausage but it can be made meatless or with chicken, shrimp or left over ham (great with ham). Most of the time is just the vegetable chopping. I only use 2 pots/pans. A large pot for the pasta and a wok style pan for the sausage and vegetables. This is great reheated for lunch left overs the next day.

Here is how you make Misha's Sauceless Pasta:

Start a pot of water boiling with some salt and a touch of oil for the pasta.Chop: Green Onions (reserve some fresh green stem for topping) Sweet mini peppers (or bell peppers - any colors) Baby Bella mushrooms or mushroom of choice Cherry Tomatoes (halved)Slice about 2/3 of a ring of Hillshire Farm Lite Smoked SausageIn a hot pain add grape seed oil and all of the sliced vegetables (except the reserved green onion stem) and sliced sausage. I like to add 1/8 cup of water at the start so nothing burns before the cherry tomatoes and mushrooms have a chance to release their liquid. Season with oregano, Italian seasoning and minced garlic. As it starts to cook down squeeze in a few inches of sun dried tomato paste. Keep stirred and turn the heat down after everything gets happy together (about 7 minutes or so). Simmer until pasta is done.Boil the pasta in the pasta water for 10 minutes. Drain and return to the pasta pot. Pour on the now simmering vegetable and sausage mix, stir together and serve with remaining chopped green onion stem. Parmesan cheese can be added on top if desired.
