Mash until fluffy with 1 cup chicken broth and salt to taste. Add some garlic if you wish.Preheat oven to 350FChop and saute onion and garlic with the olive oil in a large skillet (you can back off on the garlic if it's not your thing, season as you wish, I happen to love the stuff.) Add the meat and cook until browned. Let the whole thing simmer for a few minutes while you mix the cornstarch into 1-1.5 cups of chicken broth. Add the mixture to the meat and onions and stir until thickened like a good gravy. Cook the frozen vegetables in the microwave for about 5 minutes.Layer the meat, vegetables and mashed potatoes in a large casserole dish and pop in the oven for about 20 minutes (until the peaks of the potatoes start to get brown)Eat lots of this, you can get away with it.
