I used leftover taco meat. I make my own seasoning, so there is no gluten in my recipe. I took 5 potatoes and peeled, chopped them. Added them to water and added rosemary and salt, boiled until doneI chopped up 1.5 cups carrots with 1 cup celery and sauteed with 1 T coconut oil until crisp tenderI divided mixture into 4 oven proof dishes, then topped with 1/3 cup of homemade spaghetti sauce. I mixed that together until well combined.By the time that was done, the potatoes were ready. To make Dairy free mashed potatoes, I use the reserved liquid from the pan instead of milk. If I want extra calories or fat (if eaten alone as a side dish) I will add Blue Bonnet Light which is about the only dairy free margarine out there. Mash up your potatoes like you normally do, but use the reserved liquid instead. add more salt as needed. You don't really need the margarine in this recipe because of the other components.Add 1 1/2 cups of mashed potatoes on top and spread to make a "crust".
