Add i tsp mustard and a little pepper. Bring to the boil, stir well, then cover and simmer, stirring occasionally for 45-50 mins or until the lentils are tender and the stock is reduced and thickened.Meanwhile cook the parsnips and potatoes in a saucepan of boiling water for 20 minutes.
