Mix the yeast and sugar in the water and stir to dissolve. Place the flour, garlic salt, and pizza seasoning in a bowl. Add the water and stir to form a ball. If it doesn't all incorporate, add 1 T water and stir. Knead on a floured surface, then let rise until double (about an hour).Preheat a pizza stone in the oven to 500 degrees. with a rolling pin and pastry board, roll out the crust as thinly as possible. Transfer to the pizza stone by rolling the dough over the rolling pin, then rolling it off on the stone. Bake for 5 minutes, then remove.Cook the bacon in a frying pan until crispy; remove and blot on paper towels. Cook the onions and fennel in 1 T of the bacon grease until they're tender. Add the garlic and cook for one more minute; add back the bacon and spread on the cooked crust. Sprinkle with the cheese; bake for 4 minutes.
