Combine yeast, 1/2 cup flour, and warm water in a bowl; cover with plastic wrap; allow to rise for 15 minutes; stir to deflate.In a separate bowl, combine 2 cups flour, salt, and cool water. Combine the two mixtures in a bowl with the remaining flour.Turn dough onto a floured surface and knead for 15 minutes.Place dough in a bowl lightly dusted with flour; cover with plastic wrap; allow to rise until doubled in size, about 1 1/2 hours.Punch down dough and roll out on a lightly floured surface.Place dough in a lightly oiled 17 1/2" X 11 1/2" X 3/4" pan and push to stretch out evenly, leaving a lip against sides of pan.
