Put matzo cracker on microwaveable safe plate. Spread pizza sauce evenly on cracker. Put pepperoni slices on top of sauce. Sprinkle green peppers next. Put in microwave for 30 seconds. Remove from microwave and sprinkle on cheese. Put back in the microwave and cook until cheese is melted, about 1-2 minutes.Makes 1 serving.You can lower the fat and sodium by using another meat other than pepperoni, such as lean beef, chicken, or turkey.
