Here is how you make Andi's FireCracker Jalapeno Bacon Pork Chop:

Cut 1-2 strips bacon into thin slicesSeed/Core and slice 2 jalapenos into thin stripsSlice ~1/4 cup sweet onion very thinlyIn a large non-stick skillet. On Medium-Medium High heat warm sliced bacon until it starts to sweat and liquid fat begins to come from the meat. Add thinly sliced jalapenos and onions. Cook until 'al-dente' (tender but with a slight crisp to it). Move bacon/onion/jalapenos to the sides of the pot to continue cooking.Add 1tsp coconut oil to middle of hot pan (unless you have enough bacon fat to keep the pork from sticking ... my onions absorbed all my fat). Season pork chop on both sides with Cajun seasoning. Place porkchop in oil and brown, flipping until cooked to desired temp. (I cooked mine about 1-2 min per side until I knew mine was done to about medium which suits me fine).Serving Size:?Makes 1 fully loaded pork chop
