1 tbsp. ground cumin
1 tsp whole oregano
1 can green enchilada sauce
1 cup shredded cheese
1/4 c. chopped onion (optional)
4 tortillas (corn or flour)


How Do I Make Pork Enchiladas?

Here is how you make Pork Enchiladas:

Mix cumin and oregano together and toss with pork. Brown in sprayed skillet and turn down heat and add half of the enchilada sauce. Cook for about another 30 minutes*. Put 1/4 of the meat mixture on each tortilla topped with chopped onion (if desired) and 2 tbsp of cheese. Roll filling in tortilla and plate or put in baking dish. Top with remaining enchilada sauce and cheese and heat until the cheese has melted and the filling is hot.* I will sometimes cook the pork until it shreds, 1 hour or so depending on the size of the chunks, and then making the enchiladas with that.Number of Servings: 4Recipe submitted by SparkPeople user CHULL740.
