Here is how you make Missa's Garlic and Herb Pork Chop Roast:

I make this recipe in my french (or dutch) oven. The slow, low heat cooking is wonderful... but this can also be made using a covered casserole dish.I created this as a way to infuse a high amount of veggies, lean meat, and flavor in my quest for healthy, non-processed, whole food, just-the-good-old-fashioned-food recipes. Preheat oven to 325.Make the marinade according to package directions -- mixing it with 1/4 c smart balance oil, 2 tbsp balsamic vinegar, and 1/4 c water. Marinade pork chops in the fridge until you are ready for them.Preheat french/dutch oven on the stovetop over low to low-med heat (or use a skillet and med heat) using 2tbsp of smart balance oil. Peel and dice both the onion and garlic and sautee until onions are well cooked.While the onions and garlic are cooking, peel and chop the potatoes; chop the cabbage; slice the zucchini. Add the cabbage and potatoes into the bottom of the oven (or casserole) along with a small amount of marinade and stir to infuse. Layer the pork chops on top. Put zucchini on very top or they will cook into oblivion. Pour on all remaining marinade.Bake in preheated oven (325) for an hour+. The time is subjective as to what cookware you use. In the dutch oven I let this cook up to an hour 15 without really having to think about it - although it smells wonderful! Check on it once or twice during cooking time to stir the veggies.Please note, I know the fat content looks a little high because of the oil in the marinade... but you aren't actually eating all of the oil -- there is quite a bit of liquid left in the bottom of the dutch oven after serving...
