1/2 cup coarse-grained mustard
3 tblsp. balsamic vinegar
4 tblsp. olive oil, divided
3 tsp. Montreal steak seasoning, divided
1 lb. small potatoes, cleaned, skin on
fresh rosemary sprigs

Here is how you make Mustard Coated Pork Tenderloin and Browned Potatoes:

spray a roasting pan with PAM. cover tenderloins with steak seasoning (2 tsp.) and place in center of pan. mix mustard, balsamic vinegar, 3 tblsp. olive oil. and 8 garlic cloves in a bowl. pour mixture over pork and spread to completely cover meat. If necessary, cut potatoes in half across and add 1 tsp. steak seasoning and 1 tblsp. oil and mix completely. place potatoes around outside of meat in pan. tuck rosemary sprigs around meat and potatoes. Roast at 375 degrees F for about 90 minutes or until meat thermometer registers 160 degrees. remove pan from oven and cover; let rest for 10 minutes. carve into thick slices, pour mustard over slices and add potatoes to each plate.
