1. Season pork generously with salt and pepper, then heat olive oil in a large skillet over medium-high heat. Sear pork on all sides until browned. Transfer to slow cooker.2. Make Marinade sauce by combining honey, soy sauce, worcestershire sauce, garlic, lime zest and juice, red pepper and ginger in a small bowl and whisk together. Pour over top of pork in slow cooker. Cover and cook on low heat 6-8 hours or till pork is tender.3. Remove pork to a serving dish; pour marinade juices into a small saucepan and heat over medium-high heat.5. Make a slurry by combining cornstarch with 3 tbsp cold water. Pour into sauce mixture and bring to a boil. Reduce heat and simmer 10-12 minutes or until sauce is thickened.6.
