Add tomatoes, chicken broth and wine. Return the chops to the skillet. Bring to a boil, reduce heat and simmer 30 minutes. Add spinach and cover for 10 minutes until spinach wilts. Uncover and simmer for another 30 to 40 minutes. Meanwhile, in another skillet, saute the mushrooms and garlic in 1 tablespoon olive oil until tender, add the parsley and heat through (about 2 minutes).
