2 Tsp Star Anise, about 4 pods, crushed
2 Tsp Fennel Seed
1 Tsp Chinese Five Spice Powder
1/2 Tsp Ground Ginger
1/2 Tsp Ground Cinnamon
1/2 Tsp Red Pepper Flakes
1/4 Tsp Salt
1 Tbsp Olive Oil

Good quality balsamic vinegar for drizzling


How Do I Make Spice Rubbed Pork Tenderloin?

Here is how you make Spice Rubbed Pork Tenderloin:

Serves 4.1. Season tenderloins with salt and set aside.2. In a spice grinder, coarsely grind your fennel seed and star anise. Add five spice, ginger, cinnamon and red pepper flakes and stir to combine.3. Rub the tenderloin down with your spice mixture. Put the pork in saran wrap or ziploc bag and let sit for at least 1 hour and up to 1 day. Refrigerate if letting sit more than 1 hour.4. Heat olive oil in a heavy frying pan over medium high heat. Add tenderloin and cook, turning occasionally, until it registers 140 degrees on a meat thermometer, about 10-15 minutes. Remove from heat and let sit, loosely covered with foil for 10 minutes.5. Slice into medallions and serve. If you are serving the pork at room temperature, drizzle a little good quality balsamic vinegar over the top.This recipe is easily doubled or tripled and sits out very well at a holiday buffet.
