Season tenderloins with salt and set aside.2. In a spice grinder, coarsely grind your fennel seed and star anise. Add five spice, ginger, cinnamon and red pepper flakes and stir to combine.3. Rub the tenderloin down with your spice mixture. Put the pork in saran wrap or ziploc bag and let sit for at least 1 hour and up to 1 day. Refrigerate if letting sit more than 1 hour.4. Heat olive oil in a heavy frying pan over medium high heat. Add tenderloin and cook, turning occasionally, until it registers 140 degrees on a meat thermometer, about 10-15 minutes. Remove from heat and let sit, loosely covered with foil for 10 minutes.5. Slice into medallions and serve.
