Here is how you make Pork Udon Stir Fry:

Roughly chop mini peppers and broccoli. Slice green onion, keeping white and green parts separate. Finely chop ginger and garlic.Stir fry peppers and broccoli in a small amount of olive oil (medium heat) until slightly softened, about 3-4 minutes. Remove to a plate and set aside. In the same pan, stir fry pork until browned. Add ginger, garlic, white parts of onion, peppers, and broccoli. Stir for about 1 minute. Stir in vinegar.Rinse udon noodles in hot water, breaking apart. Add noodles to pan, along with 1/4 c. water and 1 tsp. soy sauce (or ~1/4 of seasoning packet, if included with noodles).
