(150 g) baby portobello mushrooms, sliced
(200 g) broccoli, cut into florets
(75 g) onion, cut into strips
(125 g) zucchini, cut into half moons
1.5 tbsp coconut oil
0.5 tbsp sesame oil
2 tbsp low sodium soy sauce
2 tbsp ginger puree
5 cloves garlic, minced
2 tsp salt
red pepper flakes to taste

Mix half of garlic, 1 tsp salt, soy sauce, ginger puree, and red pepper flakes in a small bowl. Add pork and toss well to coat. Let marinade while you cook veggies.Heat coconut oil in a wok or large skillet. Add mushrooms and cook until slightly soft. Add onion, zucchini, broccoli, other half of garlic, and 1 tsp salt and cook until those start to soften and the broccoli turns bright green. Remove veggies into large bowl.Add sesame oil to same pan. Cook pork over medium high heat for a few minutes, until browned. Toss veggies in with pork and mix well. Reduce heat to low/medium and let simmer for another minute or so until pork is cooked through (how long depends on how thick the pork was cut - it shouldn't take long).Serving Size:?Makes 4 servings (200 g)
