1 cup, chopped Onions, raw
.5 cup, chopped Carrots, raw
4 medium Zucchini, baby
.5 lb Pork, fresh, loin, top loin (chops), boneless, separable lean and fat, raw
2 tbsp Olive Oil
1.5 tsp Garlic powder
1.5 tsp Ginger, ground
2 serving gluten free soy sauce per 1 tbsp (by JU_ISH)
4 oz Simply Orange 100% Orange Juice - Grove Made (High Pulp)
2 serving Brown rice (1 cup cooked)

Here is how you make Zoe's Quick Stir Fry (Pork):

-heat oil in a large skillet over medium low heat-chop onion & add to pan- increase heat to medium-cook covered for about 5 minutes-push onions off to the side and add sliced mushrooms-cook uncovered for about 10 minutes-stir onions and mushrooms together, then stir in chopped carrots (I like to use matchstick carrots for stir fry)-add diced or sliced pork pieces, plus the garlic & gingerif you like some spice to your stir fry, add some crushed red pepper or chili powder, too-increase heat to medium high and stir well-allow to cook for about 2 minutes to get a good sear on the pork-add OJ & soy sauce to the pan and stir well, scraping the bottom of the pan (aka deglazing)-put the zucchini slices in a layer on top of the other stuff in the pan & put the lid back on-Allow to cook for about 4 minutes-Add in the sliced & chopped lettuce* & allow to cook for another minute or 2, until the lettuce is wilted.-Serve over brown rice*I use hearts of romaine for this because I can't eat cabbage and it works well. Feel free to use cabbage if you want. You can also use any other veggies you like... it's a great way to use up a bit of leftover meat & vegServing Size:?about 4
