2.15 lb pork tenderloin ( cut crosswise into 4 or 5 pieces)
salt and pepper
1 butternut squash cut into 1/2 in. cubes
3 apples peeled cored and cut into 1 in. pieces
1.5 onions thinly sliced
4.5 T unsalted butter, melted
1/2 head savoy cabbage, quartered cored and thinly sliced
3/4 bunch of Kale, center ribs and stems discarded and leaves thinly sliced
1/5 c. apple cider

Here is how you make Cider-Braised Pork with Harvest Vegetables:

In a large skillet heat the EVOO over med. high heat. Season the pork with salt and pepper, then add to the pan and cook, turning once until golden about 8 min. Transfer to a work surface and tent w/ foil. While the pork is cooking, in a bowl, combine the squash, apples and onion with the butter; season with salt and pepper. Add the apple mixture to the pan and cook, stirring occaisionallly, until the squash is just fork tender, 3-5 min. transfer back to the same bowl. Add the cabbage and kale to the pan and cook, stirring, for 2 min. Return the apple mixture and pork to the pan, add the cider, partially cover and simmer until the pork is cooked through, 5-8 min. Season w/ Salt and pepper. Transfer the pork to a work surface and let rest for 5 min. before slicing.
