The ones I used were probably 7-8 oz suckers. I never weighed them but next time will so can update this if need be.Rub each potatoes completely with olive oil. ( just dumped the 2 tbsps. right onto a few folded up paper towels and rubbed each potato really well)I used my air fryer for this first part, 350 F, roast option, 14 min) but I'd image your traditional way of baking potatoes would work.Bake potatoes until fork ready. Skin should be a bit crispy.I sprinkled a bit of salt on mine before baking...but you don't have to. Once potatoes are cool enough to work with, cut in half length-ways, making 6 potato boats. Place in freezer for about 20 min. This helps cool and stiffen the skins for easier filling.Once totally cold scoop out insides of potato, just set aside for now.in bowl, mix cut up meats, veggies and eggs. Beat until mixed well. (you can par cook your veggies if you choose but it's not needed. As recipe ingredients state the bacon is already cooked, you can cook the sausages a bit if ya want but really don't have to as they are already cooked before packaged) Grease a larger, rather deep pan, (I used glass to make for easier clean up but metal will do fine as well.)Carefully place empty skins in pan. Spoon egg mixture into each skin, until abut 1/2 full. Bake for 20 min at 350 F. Check them. if eggs not fully cooked just put back in oven and recheck at 5 min intervals. Once eggs look done, top each with cheese. Bake and additional 5 min or so. (The innards should come out in decent pieces, mine did)Let settle about 5 min.. While they settling, you can fry up the insides of potato you set aside earlier for on the side, with seasonings of your choice, or they can be saved and used for something else. If you use for something else subtract about 100 grams.
