2 cups chicken broth

Here is how you make Pork and Sweet Potato Tagine on Quinoa:

1. To make the tagine, preheat a large saucepan over medium heat. Add the olive oil and saute the onion and mushrooms until softened and opaque, about 4 minute. Add the ginger and pork chunks and brown the meat thoroughly. Add the tomatoes, water, cumin, coriander, paprika, and cinnamon. Bring to a boil. Add the sweet potatoes and cook uncovered for 12 to 15 minutes, until the sweet potatoes are slightly tender. Reduce the heat and add the chopped dates to the mixture. Spread the almonds evenly on a baking sheet and bake on the center oven rack for 5 to 7 minutes, until fragrant adn lightly toasted. Remove from the oven and set aside.4.
