*Extra Virgin Olive Oil, 1 tbsp
Sweet Italian Sausage, pork, 1 pound ( approx 6 sausages)
Onions 1 medium - thinly sliced
Garlic, 1 clove
Butter, salted, 1 tbsp
Jalapeno Peppers, 1 pepper chopped
Poached Egg, 3 large
*Balsamic Vinegar, 1 tbsp
1 medium yam
salt and pepper


How Do I Make Spicy Sausage and Sweet Potato Hash?

Here is how you make Spicy Sausage and Sweet Potato Hash:

Cut the sausage into small chunks. Heat the olive oil in frying pan and brown the sausage until cooked. While cooking meat, peel and shred the yam using the larger holes on grater. Remove meat from pan and set aside. Fry the onion and garlic in the same pan until browned and then add the butter, yam (first squeeze water out it ) and the chopped jalapeno. Season with salt and pepper. Fry the yam hash for 10 mins on one side and then flip to other side cooking another 10 mins. The hash should be crisp. Once cooked, add the sausage into the mix and stir together.While the yam hash is frying, prepare water for poaching the eggs. Add vinegar and a dash of salt.
