8 cup, cubes Butternut Squash
3 tbsp Olive Oil
1 medium (2-1/2" dia) Onions, raw
.33 cup Pine Nuts
16 oz Ground beef, lean
0.1 cup Tomato Paste
.25 cup Beef broth, bouillon, consomme
1 large whole (3" dia) Red Ripe Tomatoes
.25 cup, halves Apricots, dried
.5 tsp Cumin seed
.25 tsp Allspice
.125 tsp Cinnamon, ground
3 tbsp Parsley
.5 tsp Salt
.25 tsp Pepper, black
5 tbsp Butter, unsalted
1 cup Milk, 2%, with added nonfat milk solids, without added vit A
.125 cup Flour, white
.25 cup Bread crumbs, dry, grated, plain
4 tbsp Parmesan Cheese, grated


How Do I Make Pumpkin Moussaka?

Here is how you make Pumpkin Moussaka:

Roast squash, slice. Saute onion & pine nuts in olive oil. Add beef & brown. Drain. Mix tomato paste & broth & add to pan. Add apricots & tomato. Cook until apricots are soft. Add spices & parsley. Remove from heat. Grease pan, add a layer of half the squash slices. Sprinkle with some salt & dot with 3 Tbsp butter. Top with meat sauce. Put remaining slices on top. Bake at 325 for 30 min. Make sauce. Bring milk to a boil & remove from heat. Melt 2Tbsp butter, add flour & whisk. Add milk to make white sauce. Season with salt & pepper (white is preferred). Simmer 10 min. Remove pan from oven & turn up heat to 375. Pour sauce over & sprinkle with parmesan & bread crumbs. Bake 15 minutes.
