Brown meat, remove from skillet! Increase heat to med. and add onion and 2 c.pumpkin meat. Cook until pumpkin softens, about 5-7 min. Add apple and meat,cook 5 min. Add juice or wine, cook for 2 min. Combine rice and remaining ingredients, add to meat mix. Place in hollowed out pumpkin. Cover w/foil & bake @ 350 degrees for 25 min.
