1/2 cup half and half


3/4 cup prepared salsa (I used mild)


1 cup shredded pepper jack cheese


1 can corn, drained


2 pre-made pie crusts

Here is how you make Santa Fe Quiche:

This recipe makes TWO quiches1/2 lb ground pork sausage (I used 50% leaner)handful fresh spinach12 eggs or 3 cups Egg Beaters1 can cream of mushroom soup (98% fat free works fine)1/2 cup half and half3/4 cup prepared salsa (I used mild)1 cup shredded pepper jack cheese1 can corn, drained2 pre-made pie crustsBrown sausage. When sausage is almost done throw in the handful of fresh spinach for a few minutes. Drain.Meanwhile, combine the eggs, cream of mushroom soup, half and half, salsa, cheese and corn. Add in the sausage and spinach. Mix well. Pour into the 2 pre-made pie crusts evenly. Bake at 400 degrees for 50 minutes.I served mine with guacamole and sour cream.
