Leftover pork tenderloin- 3 oz
Red bell pepper- 1/2 large

Chicken broth, low fat- 1 cup

When I make this, I add whatever leftover meat I have in my fridge (chicken, turkey, pork all work great). However, quinoa is a complete protien so adding meat to this dish is optional.

Sautee onion and pepper in olive oil over medium heat until veggies become tender (about 5 minutes). Add rinsed quinoa and continue to sautee for several minutes. Pour in chicken broth and add pork (if wanted, tastes great without). Stir and cover. Simmer over low heat for approx 15 minutes until liquid is absorbed and quinoa is fluffy. Enjoy! Serves two.
