Here is how you make Chorizo and Pepper Quinoa:

Prep: dice chili pepper & garlic, and slice bell peppers and onions thin. Rinse 1 cup of quinoa.Boil 2 cups of water in a 1.5 quart saucepan. Once boiling, add rinsed quinoa and lower to a simmer for 10-15 minutes until the water is gone.Using a hot cast iron pan, brown the chorizo and break into smaller pieces. Once cooked, set chorizo aside into bowl. Brown the green peppers until soft, and set aside into bowl. Add oil, then the onions, red chili peppers, and garlic to the pan and cook until soft and translucent. Put into bowl with chorizo and bell peppers. Once the quinoa is done, add to bowl.
