3 tbsp plain low fat / 0 fat greek yogurt
2 tbsp reduced fat thousand island dressing
1/4 c canned sauerkraut

Here is how you make Nik's Reuben Ramekin:

1. In a pan sprayed with nonstick coating, saute onions until lightly carmelized then add meat and continue sauteing. 2. Lay out slices of swiss cheese - cut to size of ramekin and tear left over edges into pieces. (I used shredded swiss cheese). 3. In a bowl, combine greek yogurt, dressing and diced/shredded cheese. Add hot meat & onion mixure and sauerkraut and stir. 4. Fill ramekins. (I used small ceramic baking dishes). Top with swill cheese disc (or with shredded swiss cheese). 5.
