8 cups ham stock (substitute vegetable stock for a vegetarian meal)
3 c. chopped ham
salt to taste
6 peppercorns

How Do I Make Delicious Beans and Rice?

Here is how you make Delicious Beans and Rice:

Begin by making your home-made pork stock using the left-over hambone, cover with water and bring to a boil. Reduce to a simmer and let cook for approximately 2.5 hours. While the stock is cooking, pour beans in a bowl and cover with water. Allow them to sit overnight, this eliminates some of the gasses that are produced by the beans. Remove the ham bone and refrigerate the stock overnight. Skim all fat from the cooled stock; add beans, salt, peppercorns and bay leaf. Cover and cook on medium-low heat for 2 - 3 hours and until beans are tender. Remove the bay leaf and serve a 1 c. portion over 1/2 c. brown rice.
