This is my version of the Neely's Red Beans and Rice. Because every brand of brown rice has different cooking instructions, I suggest you use the ingredients in the recipe, but cook according to your package directions. If you don't have them, follow the instructions in the recipe. :o)For nutrition calculations, Swanson 99% Fat Free Chicken Broth and Healthy Choice Smoked Sausage were used. The dry rub is not included in the nutrition information, but if you use it add an additional 30 calories for the whole recipe, or 5 per serving.

The ingredients for Neely's Red Beans and Rice are:

1 tablespoon olive oil
1 medium onion, chopped
2 ribs celery, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1/2 pound smoked sausage, cut into 1/4-inch slices
1 tablespoon Neelys Dry Rub (or 1/2 T of your favorite Creole seasoning. I like Tony Chachere's)
1 teaspoon dried thyme
Salt and freshly ground black pepper
2 (12-ounce) cans red beans, drained and rinsed
3 cups chicken stock
2 bay leaves

Rice:
5 cups chicken stock
2 cups long-grain rice
1 tablespoon vegetable oil
Pinch salt


How Do I Make Neely's Red Beans and Rice?

Here is how you make Neely's Red Beans and Rice:

In a large pan heat olive oil over medium-high heat. Saute the onion, celery, green bell pepper, and garlic until tender. Add the smoked sausage, Neelys Dry Rub, thyme, salt and pepper. Saute for about 5 minutes then add the red beans, chicken stock and bay leaves. Let simmer uncovered on low for 1 1/2 hours. Stirring occasionally and adding water, if necessary.While the beans are cooking add all the ingredients for the rice to a small saucepan over medium heat. Cover and let cook until done. Once the rice is cooked, let stand for 5 minutes. Serve with the red beans. Neely's Dry Rub: 1 1/2 cups paprika3/4 cup sugar3 3/4 tablespoons onion powder Mix all ingredients, Use the 1 T called for in the recipe and store the rest in an airtight container.
