Richard's Red Beans & Rice:In a large pot, I add a little 'Smart Balance' (my choice) allowing it melt in the pot. In that pot, I then saute one-and-a-half cups of diced onions, a cup of diced celery and a half-cup of chopped green peppers. To that I'll add four ounces of ham that I've torn apart into pieces. Next, I add a half-teaspoon of dry thyme, and four cloves of sliced garlic. I let those ingredients cook until the veggies are all done.To my fragrant mixture of sauteed veggies, I add three cups of canned red beans. I place the top on the pot and let everything simmer for about 20 minutes. I take a look at the mixture to make sure that some of the water from the canned beans has been absorbed. Finally, I add two teaspoons of Tobasco and let the red beans simmer for a few more minutes.
