Heat 1 tbs oil in a wok over high heat. Add eggs and scramble them as they cook. Remove when just set. Add pork, in batches and cook for about 2 minutes until golden brown. Remove. Add another 1 tbs of oil to wok and add prawns and garlic, cook for 30 seconds and remove. Add onion and capsicum and toss over heat for 1 minute. Remove. 2. Add remaining oil to wok and when hot add the rice, tossing to coat with oil and break up lumps. Keep turning and tossing over the heat for about 5 minutes until heated through. Add soy sauce and stir through well. 3. Return egg, pork and prawns to wok with peas, corn and shallots. Toss until reheated.
