If you don't have a rice cooker with a brown rice setting, you may substitute white rice; or cook the brown rice mixture using the brown rice package directions as a guideline.Place the olive oil in a skillet. Add the onion, bell pepper and celery. Wilt vegetables in the oil (do not brown). Use the rice cooker measuring cup to measure and place 2 cups of brown rice in the rice cooker pot. Add the chicken broth and water to the rice. Liquid should come just to the 2 cup line marked on the inside of the pot.Next add the can of tomatoes, the wilted vegetables and the sausage. Add one teaspoon of cajun seasoning and one teaspoon of no-salt seasoning (I used Mrs. Dash).Stir everything in the pot together.Close the rice cooker and press the "Brown Rice" setting.
