Makes 6 - 1 cup Servings1. In a large pot add Vegetable stock or broth and bring to a boil. 2. Add 2 cups brown rice, cover with a tight lid and sinner until tender, aprox 40 mins.3. Dice Onion & Garlic, set aside2. Shred Pork, set aside.3. Heat a large pan or dutch oven, add Oil, Onion, & Garlic, saute until clear in color. 4. Add Pork, season with any salt free seasoning if needed. 5. Add Veggies and cook until tender.6. When rice is cool add to meat mixture & stir until well blended.8.
