Preheat the oven to 350 degrees. Cut the tops off the peppers. Clean out the insides and seeds.Boil them for a minute or two, then immediately douse them in ice water. (Blanch them) In a hot skillet, saut? the meat and add any seasonings you'd like (use beef and taco seasoning! or ground chicken and ranch!). Stir. Drain the fat. Add the tomatoes, mushrooms and cheese. Stir until cheese is melted and remove from heat. Set aside. Fill the peppers with filling. Pour water into baking dish until the bottom is covered. Tightly place the filled peppers into the baking dish. Cover each with a foil "cap" and bake for 35 minutes.
