This recipe is a great way to get a lot of flavor without a lot of calories. It's also a great way to rid your refridgerator of all those leftover meats, cheeses and veggies that are going to go bad soon! It can be adapted to include a variety of wrapping breads (white bread, pizza crust, etc), proteins (lunchmeats, beans, cheeses) and vegetables (especially good if sauteed or roasted first). Sometimes I pair it with my homemade marinara sauce.

2 Pillsbury Crescent Roll Packages
6 slices hard salami
1/4 cup Part Skim Mozzarella, shredded
1/4 cup Reduced Fat Feta Cheese
1 teaspoon Olive Oil
1 teaspoon Smart Balance Buttery Spread
1 Green onion finely chopped
2 Garlic Cloves crushed
1/4 cup kalamata olives finely chopped
2 cups fresh spinach
1 tsp oregano
1/4 tsp salt
1 egg, beaten


How Do I Make Mediterranean Roll?

Here is how you make Mediterranean Roll:

Heat oil and butter in a pan and saute onion and garlic for approximately 1 minute to infuse flavors into oil. Add olives and oregano and saute for another minute. Add spinach and oregano and stir until half wilted. Remove garlic cloves and spread spinach mixture on paper towels to drain excess oil and butter. Spread dough from Pillsbury cans on counter and roll flat until perforations disappear. Spread salami slices in one layer covering 2/3 of the surface of the rolled dough. Sprinkle with mozzarella and feta cheeses. Top with spinach mixture. Roll from end that has salami, being mindful that the dough on edges seals the ends. Place on baking sheet with seam side down. Brush beaten egg over the top and bake at 375 degrees for 15 to 20 minutes until dough is golden. Serves 8.Number of Servings: 8Recipe submitted by SparkPeople user MCDUBERS.
