1 Cup Black Beans (canned is ok--just be sure to rinse them well.)
1 Bag "Baked Tostitos"

Here is how you make Taco Salad + Fiber:

Spray frying pan with Pam cooking spray.Cook ground beef in frying pan over medium/high heat. Mix up taco seasoning in measuring cup with 1/4 c. water and pour over cooked beef. Drain beef and let cool for a few minutes (unless you would like it hot...)On each plate, put down a layer of lettuce (about 1 cup each) add tomatoes ( as many as preferred), 1/4 cup black beans, 1/4 cup of beef, and surround with 8-10 "Tostitos" chips.Add sour cream, dressing, or cheese if you prefer; I tend to eat mine "dry", so that's how I wrote the recipe.Makes 4 servings.Number of Servings: 4Recipe submitted by SparkPeople user K-GECKO.
