1 lb. lean ground turkey
2 Tablespoons Olive Oil
10 oz. mushrooms, sliced
3 cans crushed tomatoes (28 oz. each can)
4-6 garlic cloves, minced
1 large can (12 oz.) tomato paste
1 cup water
2 Tablespoons Balsamic vinegar
1/2 teaspoon crushed red pepper flakes or cayenne
2 teaspoons Italian Seasoning
1/8 teaspoon celery salt
1/2 teaspoon ground black pepper

Heat olive oil in a large pot (on medium high), brown the ground bison and the ground turkey. Drain off fat, if necessary. Add the minced garlic and all the other herbs & seasonings to the pot. Continue to cook over medium heat for about 5 minutes. Add crushed tomatoes, tomato paste, balsamic vinegar, water, and stir well. Turn the heat to low and simmer for 1 hour. Stir as needed.
