3 large bone-in pork loin chops
1 tbsp dried thyme
1 tbsp dried rosemary
1 tbsp salt
1 tbsp black pepper
2 tbsp olive oil
1 lb fresh mushrooms
1 tbsp minced fresh garlic
1 c heavy cream
1/2 c white wine

Here is how you make Pork Chops with Mushroom Cream Sauce:

Combine herbs, salt and pepper. Apply liberally to chops on both sides. Let chops sit on counter for 30 minutes. Heat olive oil in large cast-iron skillet until medium-hot. Set chops in pant and LEAVE THEM ALONE otherwise you will tear herbs off. Cook each side until golden brown, approximately 2 minutes each side (for 3/4" chops). Cover pan, remove from heat, let sit for 6 minutes. Transfer from pan to platter and cover tightly with aluminum foil. Place pan back on medium heat, add mushrooms, minced garlic and white wine. Cook until mushrooms begin to wilt. Add heavy cream and simmer until reduced by half or until thickened.
