1 1/2 lbs lean ground beef
1/4 cup olive oil
1 medium onion, diced
1 small bell pepper, diced (for more spice use a poblano)
4 cloves of garlic, diced
2 large cans tomato sauce (about 4 cups)
2 cans diced tomatos (use fresh if you wish about 2 cups)
1 small can tomato paste
1 1/2 Tbsp dried oregano
1 Tbsp dried parsley
1 Tbsp dried basil
3 bay leaves, crushed
1/2 tsp salt
2 tsp sugar
1/4 tsp black pepper
1 cup water (as needed)

In a large stock pot, heat the olive oil and saute the onion, green pepper and garlic till tender. Add the ground beef and stir freequently until the meat is browned. Remove from the heat and pour off all the meat juices and fat into a container to separate the fat from the meat juices.Place back on the heat and add the tomatoe sauce, tomatoes, paste and all the herbs and spices.discard the fat from the juices and pour the meat juices back into the mixture.Bring just to a boil then reduce the heat to a low simmer. for 45 minutes to an hour stiring freequently.This serves 8 - 12Number of Servings: 12Recipe submitted by SparkPeople user BILLTMAN.
