3 Tbs Low Sodium Soy sauce
2 Tbs Dry Sherry

2 Tbs Oyster flavored Sauce
4 Tbs Peanut Butter - Organic
1 Tbs Rice Vinegar (unseasoned)
1-1/4 cup low sodium chicken broth
1 Tbs Peanut Oil
1" piece Fresh Ginger Root, minced (about 1 Tbs)
6 cloves Garlic, minced
1/2 tsp red pepper flakes


How Do I Make Spicy Sichuan Noodle Sauce?

Here is how you make Spicy Sichuan Noodle Sauce:

1. Combine pork, 1 Tbs soy sauce, sherry and pinch of white pepper in a small bowl. stir well with a fork and set aside while preparing other ingredients. Whisk together oyster-flavored sauce, remaining soy sauce, peaunut butter, vinegar and pinch of white pepper. Whisk in chicken broth and set aside.2. Bring 4 quarts of water to a boil in large stock pot.3. Meanwhile, heat 12-inch skillet over high heat until hot (about 2 minutes). Add peanut oil and swirl in pan to coat pan. Add pork and cook until browned, breaking up pieces with a spatula. Stir in ginger, garlic and red pepper flakes and cook until aromatic (about 2 minutes). Add peanut butter/chicken broth mixture, whisking to combine. Reduce heat to medium-low and simmer to blend flavors and thicken sauce, stirring occasionally, 3-5 minutes more.4. While sauce simmers, add noodles to boiling water and cook until tender. Drain noodles and divide amoung individual bowls. Top with sauce. sliced scallions and bean sprouts, if desired.
