2 lg cloves garlic, minced
3 medium tomatoes
1 medium zucchini
2 small summer squash
2 Tbsp dried basil (may use fresh if you have it)
1 tsp dried oregano (may use fresh if you have it)
1 (11.5 oz) can low sodium V8


How Do I Make Slow-Cooked Buffalo Vegetable Sauce?

Here is how you make Slow-Cooked Buffalo Vegetable Sauce:

Heat a skillet over medium heat. Add bison and minced garlic; saute until meat is no longer pink. Set aside. Wash tomatoes, cut in half and then into thin wedges. Wash zucchini and squash; cut in half lengthwise and then slice into 1/4 inch slices. Place squash in bottom of crock, then tomatoes and meat mixture. Add spices. Pour V8 over entire mixture.
